The dressing? A classic blend of lime, maple syrup, and olive oil that ties everything together beautifully.

Rocket, Orange, Pear, and Walnut Salad
Peppery rocket (rucola), sweet juicy oranges, crisp pears, and crunchy walnuts make a delicious combination.
Ingredients
- 60 g rocket (aka rucola) and mixed salad leaves
- 1/2 orange
- 1/2 Beurre Bosc pear
- 15 g walnuts
- 1/2 lime (about 20ml juice)
- 10 ml maple syrup
- 10 ml olive oil
- a pinch of salt and pepper
Instructions
- Start by giving your rocket and salad leaves a good wash. After drying, pop them into a large bowl.
- Cut the pear into quarters and remove the core of the centre. Slice them thinly, about 2-3mm thick.
- Cut the orange into quarters and carefully remove the fruit from the skin. Slice the fruit into thin half-moons.Tip: Removing the white pith from the centre of the orange enhances both the texture and taste.
- Toss the sliced pears and oranges into the bowl with the rocket and mixed leaves.
- Take a handful of walnuts, crush roughly with your fingers, and add them to the mix.
- For the dressing, squeeze the juice from the lime into a small bowl, then add the maple syrup, olive oil, salt, and pepper. Whisk until blended well.
- Drizzle the dressing over the salad, and toss gently to coat evenly. And there you have it – a salad fit for a feast!
